The Dutch oven for sourdough bread

Bread rises best in steam. For the first twenty minutes or so, a lid traps the moisture coming off the dough, the crust stays soft, and the loaf can spring open before it sets. Then the lid comes off and the crust browns. Professional ovens inject steam. At home, a heavy covered pot does the same job, which is why nearly every sourdough recipe calls for a Dutch oven.

Any heavy lidded pot will work. The differences that matter are practical. A deep round pot means lowering soft dough into searing iron, and it only bakes round loaves. A shallow base with a tall lid lets you set the dough down from above, and an oval one takes a long batard. Weight matters too, because the pot goes in and out of a very hot oven at least twice for every loaf.

America's Test Kitchen tested bread ovens recently and named the Challenger bread pan its winner, Le Creuset's bread ovens its lightweight picks and Lodge's combo cooker its best buy. Those three lead here, with an ordinary enameled Dutch oven for anyone who wants one pot for bread and dinner, and a ceramic cloche for anyone who wants less weight.

How we chose

  1. Loading safely. How the dough gets in: dropped into a deep pot, or set onto a shallow base with the lid lowered over it.
  2. Loaf shape and size. Round boules only, or room for a long batard, from America's Test Kitchen's testing and the makers' dimensions.
  3. Weight. Measured or stated weight, since a hot pot is lifted at least twice per bake.
  4. Who sells it. Every pick is sold on Amazon US by Amazon.com or by the maker itself.

The 5 picks, in detail

Challenger Bread Pan Cast Iron Loaf Pan with Lid for Artisan Sourdough and Homemade Bread Baking

Challenger Breadware

The Challenger turns the usual pot upside down. Its base is shallow, so the dough is set down onto it rather than dropped into a deep well of hot iron, and its tall lid comes down over the loaf to hold the steam. The listing gives it as 15.5 by 10.5 by 5.5 inches, rated to 500 degrees Fahrenheit, pre-seasoned with grapeseed oil and made in the USA. It is sold on Amazon by Challenger Breadware.

America's Test Kitchen named it its winner among bread ovens. ATK measured an oval base of 11 by 8.5 inches, found it took a 1 kilogram boule or batard, and liked its two sets of handles.

It is heavy: 20 pounds by the listing, nearly 22 by ATK's scale. It is also single-purpose and large, so check that it fits your oven before buying. Skip it if you bake bread once a month.

The catch. Heavy, expensive and good for one thing only.

Lodge Cast Iron Combo Cooker, 3.2 Quart Deep Pot & 10.25 Inch Skillet Lid

The best valueNo. 2

Lodge Cast Iron Combo Cooker, 3.2 Quart Deep Pot & 10.25 Inch Skillet Lid

Our take. The pot sourdough bakers have used for years: load the dough onto the skillet half and cover it with the deep half.

Made in
USA

Generations
Pieces
3.2 qt deep pot and 10.25 in skillet lid
Weight
12.85 lb (Lodge)
Material
Cast iron, seasoned with vegetable oil
Loaves
1 kg boules, smaller batards (America's Test Kitchen)
Care
Hand wash, dry, oil

The Combo Cooker is a 3.2 quart deep pot and a 10.25 inch skillet that fits over it as a lid. For bread, bakers turn it over: the dough goes onto the shallow skillet and the deep pot comes down on top, which gives the same safe loading as the Challenger for a fifth of the price. Lodge makes it in the USA and lists it at 12.85 pounds.

America's Test Kitchen named it the best buy among bread ovens. It made excellent 1 kilogram boules and smaller batards, and ATK liked its compact size, though the single set of handles means placing the pieces with some care.

Off bread duty it is a skillet and a pot for stews and frying, which makes it the easiest bread vessel to justify. Skip it if you want long loaves.

The catch. Round, so long loaves are a tight fit, and the handles are small.

Le Creuset Enameled Cast Iron Oval Bread Oven, 11.5 inch, Marseille

The lightest cast ironNo. 3

Le Creuset Enameled Cast Iron Oval Bread Oven, 11.5 inch, Marseille

Our take. A purpose-made enameled bread oven at about half the weight of the cast iron alternatives.

Made in
France
Keeps for
Generations, if kept away from thermal shock
Length
11.5 in, oval
Weight
8 lb 13.6 oz (America's Test Kitchen)
Interior
Matte black enamel; no seasoning needed
Base
Raised ridges, three-ring embossing
Loaves
1 kg batards, 750 g rounds (America's Test Kitchen)

Le Creuset's bread oven pairs a low base with a tall domed lid. The oval version is 11.5 inches long, with a matte black interior enamel that needs no seasoning, raised ridges on the base for even browning, and a three-ring embossing that the maker says removes the need for parchment.

America's Test Kitchen named it the best lightweight bread oven and weighed it at 8 pounds 13.6 ounces, roughly half the Challenger. It baked 1 kilogram batards and 750 gram rounds. ATK noted that the rings on the base print onto the bottom of the loaf, which some bakers like and some do not.

Le Creuset also makes a round bread oven, which ATK found suits larger round loaves and smaller batards. Skip either if you would rather spend the money on a Dutch oven that also cooks dinner.

The catch. The ringed base marks every loaf, and it is a single-purpose pot.

Le Creuset Enameled Cast Iron Round Dutch Oven, 5.5 qt., Marseille

One pot for bread and dinnerNo. 4

Le Creuset Enameled Cast Iron Round Dutch Oven, 5.5 qt., Marseille

Our take. The Dutch oven to own anyway, which also bakes a good round loaf.

Made in
France
Keeps for
Generations, if kept away from thermal shock
Capacity
5.5 qt
Weight
11 lb 3.5 oz with lid (America's Test Kitchen)
Oven
To 500°F per the listing
Interior
Sand-colored enamel
Dishwasher
Safe per the listing; hand washing recommended

If you will own one heavy pot, a 5.5 quart round Dutch oven bakes bread and does everything else. The Le Creuset is the lightest of the French pots at that size, 11 pounds 3.5 ounces with the lid by America's Test Kitchen's scale, and the listing rates it oven safe to 500 degrees Fahrenheit, so a hot preheat is no trouble.

The drawbacks for bread are the ones every deep pot shares. The dough has to be lowered into hot iron, usually on a sling of parchment, and a round pot bakes only round loaves. The pale interior will stain over time, which affects its looks, not its cooking.

Our guide to the Dutch oven to hand down covers more pots at this size, and Le Creuset vs Staub explains why the lighter Le Creuset is the better bread pot of the two.

The catch. Deep and round: loading takes care, and long loaves will not fit.

Emile Henry Modern Bread Cloche | Burgundy

The light ceramic optionNo. 5

Emile Henry Modern Bread Cloche | Burgundy

Our take. A glazed ceramic base and dome at about 6 pounds, for bakers who find cast iron too heavy.

Made in
France

Material
HR ceramic, glazed
Weight
6.3 lb (Emile Henry)
Size
12.7 x 11.6 x 5.5 in (Emile Henry)
Oven

Guarantee
10 years

Emile Henry makes the cloche in France from Burgundy clay, in its HR ceramic. The maker lists the Modern Bread Cloche at 6.3 pounds and 12.7 by 11.6 by 5.5 inches, says it holds a loaf made with 3.5 to 4 cups of flour, and rates its ceramics to go from the freezer to a 500 degree Fahrenheit oven. It is dishwasher safe and carries a 10 year guarantee against production faults.

The base is flat, so loading is as easy as with the Challenger, and the criss-cross pattern on the platter keeps the loaf from sticking. The listing notes the dome can be turned over and used as a bowl for mixing or proofing.

America's Test Kitchen did not include it in its bread oven testing, so there is no independent comparison. Ceramic holds less heat than cast iron and can crack if knocked or dropped. Skip it if you want the heaviest, most forgiving heat.

The catch. Not independently tested for bread, and ceramic breaks where iron would not.

Every comparison

What size you need

Most home sourdough recipes make a loaf from 500 grams of flour, roughly a kilogram of dough. Every pick here handles that as a round loaf. For long batards, choose the Challenger or the oval Le Creuset; a round pot will not take them.

A 5.5 quart round Dutch oven is the size most bread recipes have in mind.

Loading without burns

Preheat the pot in the oven, then take it out onto a heatproof surface before loading. With a deep pot, lower the dough on a parchment sling rather than dropping it in. With a shallow base, set the dough down and lower the lid from above. Thick, dry oven mitts are not optional.

Burnt bottoms

Heavy iron on a low rack can scorch the base of the loaf. Bakers move the pot up a rack, slip a baking sheet under it once the lid comes off, or bake on parchment. The Challenger's maker suggests inverting the lid into the base partway through the bake for the same reason.

Frequently asked questions

What is the best Dutch oven for sourdough bread?

For a weekly baker, the Challenger bread pan, America's Test Kitchen's winner. For value, Lodge's Combo Cooker at about $60. If you want one pot for bread and cooking, a 5.5 quart round enameled Dutch oven such as Le Creuset's.

What size Dutch oven do I need for bread?

About 5 to 6 quarts for a standard loaf from 500 grams of flour. Lodge's 3.2 quart Combo Cooker also works, because the loaf sits on the wide skillet half.

Can you bake bread in an enameled Dutch oven?

Yes. Check the knob's heat rating first. Le Creuset's listing rates its 5.5 quart round to 500 degrees Fahrenheit. The pale interior will stain over time, which is cosmetic.

Is a bread pan better than a Dutch oven?

For bread alone, usually. A shallow base is easier and safer to load, and oval shapes take long loaves. A Dutch oven is better if you want one pot that also cooks dinner.

Do I need to preheat the Dutch oven?

Most sourdough recipes preheat the pot with the oven so the loaf meets hot iron. Follow your recipe, and check the maker's limits for heating an empty pot.
