Before you buy.

The Thanksgiving turkey, the Christmas rib roast, the ham on the sideboard. A roasting pan spends most of the year at the back of a cupboard and then carries the most expensive thing you cook, at the moment the most people are watching. The disposable foil tray from the grocery store can do it, just, until it buckles as you lift it out of a 350 degree oven with 18 pounds of bird on it.

What separates a good pan from a cheap one is not the roasting. Almost any pan roasts. It is what happens after. A heavy clad pan can go straight onto two burners, take a splash of wine and a whisk, and turn the browned drippings into gravy without a separate saucepan. A thin pan scorches, warps or will not sit flat.

So we judged these on three things: a rack that lifts the roast and comes out cleanly, handles you can grip with oven mitts on a full pan, and a base that can go on the stove. Sizes are given in inches because that is what decides whether it fits your oven. Measure yours before you buy.

Stovetop gravy
Clad construction, an aluminum or copper core under stainless, heats evenly across two burners. Single-ply stainless and nonstick aluminum generally do not.
Rack
A sturdy V or flat rack that lifts the roast off the drippings. Nonstick racks release skin more easily. Stainless racks last longer.
Handles
Upright handles give room for oven mitts. Low side handles save oven space but are harder to grip on a full pan.
Size
A 16 by 13 inch pan holds a turkey of about 18 to 20 pounds. Check your oven's interior width before buying anything larger.

All-Clad's Specialty roaster is single-ply polished stainless steel with a bonded base that resists warping, and handles fixed with stainless rivets. The 13 by 16 inch pan takes a large turkey, and the pan and rack together go in the oven and under the broiler.

Single-ply matters less in a roasting pan than in a skillet. The oven does the cooking, and the pan's job is to hold the bird, catch the drippings and survive years of high heat. Where you will notice it is on the stovetop: gravy made across two burners needs a little more attention than in a fully clad pan like the Made In or the Le Creuset below.

It is dishwasher safe, which few roasters are, and carries All-Clad's limited lifetime warranty. It will not work on induction, and the rack is rated to a lower temperature than the pan.

The catch. Not fully clad, so stovetop gravy heats less evenly than in the tri-ply pans, and it will not work on induction.

Mauviel has worked copper in Villedieu-les-Poeles in Normandy since 1830. The M'Heritage 150 is 1.5 millimeter copper bonded to an 18/10 stainless steel lining, 90 percent copper and 10 percent stainless. The large pan measures 15.7 by 11.8 inches and 3.1 inches deep, and comes with a rack.

Copper responds to heat faster and spreads it more evenly than anything else on this list, which is exactly what you want when making a pan sauce across two burners. It is also the only pan here that people put on the table. A roast carved in a copper pan at the sideboard is part of the meal.

The costs are real. It must be hand washed, the copper tarnishes and needs polishing if you want it bright, and it needs a separate interface disc for induction. Mauviel offers the same pan with cast stainless, cast iron or brass handles, and the cast iron versions are usually the least expensive. Skip it if you will not polish it or look at it between holidays.

The catch. The smallest large pan here, so check it against your turkey, and the copper needs polishing to stay bright.

Made In's roaster is 3-ply stainless clad and large: the pan measures about 18.5 by 12.5 inches and 6 inches tall at the handles. It weighs 8.6 pounds on its own and 10 pounds with the rack, and it is heat safe to 600°F.

The handles are the reason to choose it. They stand vertically above the rim, so there is room for thick oven mitts, and Made In designed them so a sheet of foil can seal over the whole pan for braising a brisket or holding a roast.

At 18.5 inches it will not fit every oven, especially 24 inch ranges and older wall ovens. Measure first. Made In recommends hand washing.

The catch. Too long for some ovens, so measure before buying.

Le Creuset is known for enameled cast iron, but for a turkey this stainless pan is the better Le Creuset. It is triple layer with an aluminum core running from base to rim, a titanium-infused stainless exterior meant to resist scorching and discoloration, and a dripless pouring rim that makes it easier to tip the drippings into a separator.

The rack is nonstick coated. It releases crisp skin cleanly and is dishwasher safe, though nonstick coatings do not last as long as bare stainless. The pan works on all cooktops, including induction, and is oven safe to 500°F.

Skip it if you roast above 500°F, or if you want the whole kit to last as long as the pan does. A replacement stainless rack is cheap if the coating wears.

The catch. Lower oven limit than the All-Clad or Made In, and the nonstick rack is the first part to wear.

The MultiClad Pro roaster is tri-ply, a pure aluminum core under brushed stainless, which is the construction that matters for stovetop gravy. Cuisinart rates it for turkeys up to about 18 pounds, and it works on induction.

It has riveted stainless handles, a solid stainless rack and a drip-free pouring rim. Overall it measures about 19.3 by 12.1 inches with handles and 5.2 inches tall, and Cuisinart backs it with a lifetime warranty. It often sells well under list price at authorized retailers.

The handles sit low and close to the pan, which makes a full pan awkward to lift with bulky mitts. Buy it if you roast twice a year and want the pan to go on the stove afterwards.

The catch. Low side handles are harder to grip than upright ones on a full pan.

Making gravy in the pan

Lift the roast and rack out, pour off most of the fat, and set the pan across two burners on medium. Add wine or stock and scrape up the browned bits with a flat wooden spatula, then whisk in a flour and butter roux or a cornstarch slurry. Clad and copper pans handle this well. Thin pans, nonstick aluminum and disposable foil do not.

If your cooktop is induction, check the pan. The All-Clad Specialty roaster is not induction compatible, and copper needs an interface disc.

Measure the oven first

Most full-size ovens take a 16 by 13 inch pan with room for air to move. Pans of 18 inches and more, and anything going into a 24 inch range or an older wall oven, need measuring first. Leave room around the pan on each side so hot air can circulate.

Care

Soak burnt-on drippings with hot water and a little dish soap, then use a nonabrasive cleanser such as Bar Keepers Friend on stainless. Do not use it on copper exteriors unless you want them bright. Hand wash any pan the maker says to, even if the dishwasher will fit it.

Questions.

What size roasting pan do I need for a turkey?

A 16 by 13 inch pan holds a turkey of about 18 to 20 pounds. For birds over 20 pounds, look at 18 inch pans like the Made In, and check your oven's interior first.

Do I need a rack?

It helps. A rack lifts the roast out of the fat so the underside browns rather than stews, and it makes the bird easier to lift out. In a pinch, a bed of thickly sliced onions and carrots does the same job.

Can I make gravy in the roasting pan on the stove?

Yes, if the pan is clad stainless or copper. Set it across two burners on medium. Avoid it with thin single-ply or nonstick aluminum pans.

Is a copper roasting pan worth it?

For cooking alone, clad stainless gets you most of the way for a fraction of the price. Copper earns its cost if it also goes to the table and you do not mind polishing it.

Stainless or nonstick roasting pan?

Stainless. Browned fond is the point, and nonstick surfaces resist it, wear out and are not meant for metal whisks. A nonstick rack is a reasonable compromise.
