Best Cookware Set for Induction Cooktops

Induction does not care about brand or price. It cares whether a magnet sticks to the bottom of the pan, and whether that bottom sits flat on the glass.

The cookware for an induction cooktop

An induction cooktop does not heat the glass. It makes a magnetic field, and a pan made of magnetic metal heats itself inside that field. Energy Star puts it plainly: induction heats ferromagnetic cookware, and about 85% of the energy reaches the food, against about a third with gas. The glass stays fairly cool where there is no pan, which is why a spill does not bake on.

So the first question about any pan is not quality but material. Cast iron works. Carbon steel works. Enameled cast iron works. Stainless steel works when the outer layer is a magnetic grade, which is true of most good clad stainless sold today. Plain aluminum, copper, glass and ceramic do not, unless a steel plate has been bonded to the base.

The picks below cover the three things an induction kitchen actually needs: a clad stainless set for everyday cooking, a carbon steel pan for searing, and an enameled cast iron Dutch oven for braising and bread. All five are sold on Amazon by Amazon.com or by the brand.

How we chose

  1. Magnetic base. A cooking surface or exterior that a magnet grips firmly, confirmed by the maker as induction compatible.
  2. Flat bottom. A base that sits flat on the glass and stays flat when hot, since induction heats only what touches the field.
  3. Even heat. Clad construction or thick iron, so the heat spreads past the coil's ring to the edges of the pan.
  4. Long life. Steel and iron that last decades, with a stated warranty where the maker gives one.

We read makers’ specifications, warranties, care instructions and the sources listed at the end. We do not accept paid placements. How we choose

The 5 picks, in detail

Tramontina Signature Tri-Ply Clad Stainless Steel 10-Pc Pots and Pans Set

Tramontina Signature Tri-Ply Clad Stainless Steel 10-Pc Pots and Pans Set

The Signature Tri-Ply Clad line is an aluminum core bonded between layers of stainless steel, carried up the sides of each pan rather than stopping at a disc on the base. Tramontina lists it for every stovetop including induction, oven safe to 500°F and NSF certified, with a lifetime warranty.

The ten pieces are six pans and four lids: 8 and 10 inch fry pans, 1.5 and 3 quart saucepans, a 3 quart braiser and a 6 quart sauce pot. That covers most of what a household cooks on a weeknight, and the braiser is the most useful piece most people never think to buy.

Skip it if you already own one good Dutch oven and a skillet you love, and need only a pan or two. Tramontina sells the line open stock as well.

The catch. The 8 inch fry pan is small for most cooking, and the price on Amazon moves around a good deal.

Merten & Storck Pre-Seasoned Carbon Steel 12" Frying Pan Skillet

The entry point, for searingNo. 2

Merten & Storck Pre-Seasoned Carbon Steel 12" Frying Pan Skillet

Our take. A full-size carbon steel skillet that a magnet grabs from edge to edge, for less than one good clad fry pan.

Keeps for
Decades, with seasoning kept up
Size

Material
Carbon steel, pre-seasoned

Care
Hand wash only; metal utensil safe

Carbon steel is iron with a little carbon, so it is about as magnetic as cookware gets, and it heats fast on induction. Merten & Storck's 12 inch pan comes pre-seasoned under a protective silicone coating: wash it and cook. It is oven safe to 600°F, safe with metal utensils, and the listing names induction among its cooktops.

It is the pan for steaks, chops and anything that wants a hard sear, and lighter than a 12 inch cast iron skillet. The seasoning gets slicker with use, so the first weeks are the worst it will ever be.

Skip it if you want something that goes in the dishwasher or that can sit with tomato sauce in it. Carbon steel needs hand washing, drying and a wipe of oil, as cast iron does.

The catch. The maker publishes little about thickness or origin. It is bought on price and on being carbon steel.

Lodge Essential Enamel Cast Iron Dutch Oven, 6 Quart

The Dutch oven on a budgetNo. 3

Lodge Essential Enamel Cast Iron Dutch Oven, 6 Quart

Our take. Cast iron under enamel, which makes it fully magnetic, for a fraction of the French price.

Material
Enameled cast iron, PFAS free

Enameled cast iron is one of the easiest materials for induction. The iron is magnetic all the way through, the base is heavy and flat, and it holds heat long after the cooktop cycles down. Lodge's 6 quart pot is oven safe to 500°F and PFAS free, and Amazon sells it directly in many colors.

Six quarts is a generous size: a whole chicken, a pot of beans, a batch of chili for eight, or a boule of no-knead bread. It browns and braises much like the pots that cost five times as much.

The savings show in the enamel, which owners report chips more readily than Le Creuset's. On induction, lift the pot rather than sliding it, since a heavy iron base dragged across glass can scratch the cooktop.

The catch. Budget enamel is more prone to chips at the rim, and a chipped cooking surface ends the pot's useful life.

Le Creuset Signature Enameled Cast Iron Round Dutch Oven, 5.5 qt

The Dutch oven to keepNo. 4

Le Creuset Signature Enameled Cast Iron Round Dutch Oven, 5.5 qt

Our take. The reference Dutch oven, magnetic through and through, with a pale interior that shows you when the fond is ready.

Made in
France
Keeps for
Generations, if kept away from thermal shock
Capacity
5.5 qt
Material
Enameled cast iron

Oven
Safe to 500°F

Le Creuset casts its Signature pots in northern France and rates them for every cooktop, induction included, and the oven to 500°F. The light sand-colored interior is the practical advantage: you can see browning and catch scorching before it happens, which matters more on induction, where heat arrives fast.

At 5.5 quarts it suits a household of four with leftovers, and it is lighter than most rivals at the same size. On induction, heat it gradually on medium rather than starting on the highest setting, and lift it rather than drag it across the glass.

Skip it if the Lodge will do. On the stove the two cook much alike. You pay here for tougher enamel, a lighter pot and French casting.

The catch. The light interior stains over years of use and needs occasional cleaning to stay pale.

Demeyere Industry 5, 7 pc Cookware Set, 5 Ply Made in Belgium

Built for inductionNo. 5

Demeyere Industry 5, 7 pc Cookware Set, 5 Ply Made in Belgium

Our take. Five-ply Belgian stainless engineered around induction, with welded handles and a base that stays flat when hot.

Made in
Belgium
Keeps for
Decades; lifetime warranty
Pieces
9.5 in fry pan; 3 qt saucepan, 3 qt sauté pan and 5.5 qt Dutch oven, each with lid
Construction
5-ply, rim to rim, aluminum core
Handles
Welded 18/10 stainless steel, no rivets
Oven
Oven and broiler safe to 500°F

Demeyere, now part of the Zwilling group, sells the Industry 5 line as optimized for induction. It is five-ply from rim to rim with a thick aluminum core, and the maker's flat base technology is meant to keep the bottom flush with the glass when hot, which is exactly where a cheaper pan loses contact and heats unevenly.

The set is a 9.5 inch fry pan, a 3 quart saucepan, a 3 quart sauté pan and a 5.5 quart Dutch oven, each pot with a lid. The handles are welded rather than riveted, so there are no rivet heads inside the pan to catch food, and the Silvinox surface treatment keeps the steel bright and resists fingerprints. It is dishwasher safe and oven and broiler safe to 500°F.

Skip it if you want a big set for the money. Seven pieces at this price is four pans. Buy it if you cook on induction every day and want pans that will outlast the cooktop.

The catch. Heavy, expensive per piece, and the Dutch oven is stainless, not cast iron, so it does not hold heat like the Le Creuset.

The magnet test

Take a fridge magnet to the bottom of the pan. If it grips firmly, the pan will work on induction. If it slides off or barely holds, it will not, or it will heat weakly. Energy Star recommends the same test, and many boxes and bases carry an induction symbol, a drawn coil of wire.

Test the middle of the base, not the rim. Some aluminum pans carry a steel disc on the bottom only, and the magnet will grip there and nowhere else. That is enough to work, though the heat may not reach the edges as evenly as a fully clad pan.

What works and what does not

Works: cast iron, enameled cast iron, carbon steel, and stainless steel with a magnetic exterior, which covers most clad stainless sold today. Works with a steel base plate: many nonstick and aluminum pans sold as induction ready.

Does not work: plain aluminum, copper, glass, ceramic and most older thin stainless. Converter discs exist, but they turn the cooktop back into a slow hot plate and give up the speed that made induction worth buying.

Living with it

Lift heavy iron rather than sliding it, since rough cast iron can scratch the glass. Heat thin pans gradually; owners report that carbon steel left empty on the highest setting can warp. A low hum from some pans on high power is normal and comes from the pan, not a fault in the cooktop.

Match the pan to the ring. A pan much smaller than the zone may not be detected, and one much larger heats in a ring around the center. Thick clad bases spread that heat best.

Frequently asked questions

How do I know if a pan works on induction?

Hold a magnet to the bottom. If it sticks firmly, the pan works. Look also for an induction symbol on the base or the box.

What is the best cookware set for an induction cooktop?

For most kitchens, Tramontina's Signature Tri-Ply Clad 10 piece set: fully clad, induction rated and inexpensive. For daily induction cooking with no compromises, Demeyere's Industry 5.

Does carbon steel work on induction?

Yes. Carbon steel is strongly magnetic and heats quickly on induction. Bring it up to temperature gradually rather than on the highest setting.

What is the best Dutch oven for an induction cooktop?

Any enameled cast iron Dutch oven works, since the iron is magnetic. Le Creuset's Signature 5.5 quart is the one to keep; Lodge's Essential Enamel 6 quart is the budget choice.

Can induction scratch or crack the glass?

The heat will not, but dragging heavy pans can scratch it, and dropping cast iron can crack it. Lift pots and keep the glass clean.

Does All-Clad work on induction?

All-Clad's stainless D3 line is induction compatible, as our cookware set guide notes. Check any copper or aluminum line separately with a magnet.
