Carving goes wrong in predictable ways. The knife is too short, so it saws instead of slicing in one long stroke. The edge is dull, so it tears the skin and presses the juice out. The board is too small or has no groove, so the juice runs onto the counter or the tablecloth. None of these needs skill to fix; they need the right three objects.

The knife should be long, eight inches at the least and ideally longer, with a thin blade that slices rather than wedges. The fork should have straight, sturdy tines that hold a roast still without shredding it. The board should be bigger than the roast by a hand's width on every side, with a groove or a well deep enough for what comes out when you slice.

Henckels is the value line of the Zwilling group, and the Classic range is its forged, triple-riveted collection. The set is an 8-inch carving knife and a 7-inch flat-tine carving fork. Henckels lists German stainless steel, a hardness of 55 to 58 HRC, and manufacture in Spain.

It looks and handles like the traditional German carving set it is modeled on: a full bolster, a black handle with three rivets, a satin-finished blade. The knife is dishwasher safe by the maker's account, though Henckels recommends hand washing, and so does everyone who wants an edge to last.

Eight inches is the minimum for carving. It will manage a turkey and a leg of lamb, but a large standing rib roast or a whole ham asks for more length. For those, pair the fork with the Victorinox slicer below.

The catch. The 8-inch blade is the short end of what carving wants.

Twelve inches of thin stainless steel is what makes carving look easy. The blade is long enough to cross a whole turkey breast or a rib roast in one pull, so each slice comes off smooth instead of ridged. The set is a 9-inch hollow-ground slicing knife and a stainless carving fork. The knife has a VG-MAX steel core clad in 68 layers of Damascus steel, with hollow-ground indentations along the blade to keep slices from clinging. The D-shaped Pakkawood handle suits either hand.

Epicurean boards are made in the United States from a paper composite that behaves like hardwood under a knife but goes in the dishwasher. The BBQ Board is the maker's carving shape: a plain rectangle, 3/8 inch thick, with what Epicurean calls a super groove. On the large 19.5 by 15 inch size, the maker says the groove holds 8 ounces, a full cup.

That is the useful fact at a holiday meal. A rested turkey or a rib roast gives up more juice than most board grooves hold, and a board that overflows means a wet counter and a lost start to the gravy. This one is also light enough to lift and tip into a pan.

Epicurean says the natural color develops a darker patina over time, and knives will lightly score the surface. It is a workhorse, not a centerpiece. Carve on it in the kitchen and carry the slices out on a platter.

The catch. Looks utilitarian and darkens with age; not a board to bring to the table.

J.K. Adams has made wooden kitchenware in Vermont for decades, and this is its walnut carving board: 20 by 14 inches of American black walnut, with a juice groove that runs in a tree pattern into a well at one end. It comes finished in a blend of mineral oil and beeswax.

Walnut is darker and softer on a knife edge than maple, and a roast on it looks like the photograph in the cookbook. The branching groove leads juice to the well rather than letting it pool around the meat, and the well can be spooned straight into the gravy.

It is wood, so it is hand wash only and needs oil every few weeks at first. It is also heavy, and a full well is best carried level. For carving in the kitchen, the Epicurean is easier to live with.

The catch. Hand wash and oil it, or it will dry out and crack.

Let it rest, then carve

Give a turkey or a large roast twenty to thirty minutes under loose foil before carving. The juices settle back into the meat, and less of it ends up in the groove.

Carve a turkey by removing each breast whole, then slicing it across the grain on the board. It is faster and neater than carving slices off the bird at the table.

Sharpen before the holiday, not on the day

A carving knife sits in a drawer for most of the year. Hone it the week before and have it sharpened if honing no longer brings back the edge. A hand-held steel just before carving is showmanship; the real work is done earlier.

Keep the board from sliding

Lay a damp kitchen towel under any board before carving. A board that moves while you press down with a long knife is how carving accidents start.

Questions.

What is the difference between a carving knife and a slicing knife?

A carving knife is usually 8 to 10 inches with a pointed tip for working around bone. A slicing knife is longer and thinner, often 12 inches, and cuts cleaner slices from boneless meat. For a turkey, either works; for a rib roast off the bone, the slicer is better.

Do I need a carving fork?

It helps. A fork holds a hot roast still without your hand near the blade. Any sturdy two-tine fork will do if your knife came alone.

Can I use my chef's knife to carve?

You can, but the wide blade wedges rather than slices and most are too short to cross a breast in one stroke. The slices come out thicker and more ragged.

Serrated or straight edge for carving?

Straight. A serrated edge tears cooked meat and leaves ridged slices. Save serrations for bread.

How big should a carving board be?

Around 20 by 14 inches for a turkey or a rib roast. Smaller boards leave the meat near the groove, and the juice runs off the edge.
