A cookie sheet and a sheet pan are not quite the same thing. A sheet pan has a rim on all four sides, which is right for roasting and for anything that runs. A true cookie sheet has one or more open edges, so cookies slide off onto a rack without a spatula dragging over a lip, and hot air moves across the tray more freely. For a batch or two a year, the half sheet you already own is fine. For the week of holiday baking, a proper cookie sheet earns its drawer space.

The material matters most. Bare aluminum heats quickly and evenly and browns well. Nonstick-coated aluminized steel releases without parchment and cleans easily but asks for soft utensils. An insulated sheet, two layers of metal with air between them, slows the bottom heat and keeps a pale, soft cookie from browning underneath. Dark pans brown faster than light ones; every pick here is light.

An insulated sheet is two layers of metal sealed with a cushion of air between them. Heat reaches the cookie more gently from below, so the bottoms bake without browning. Nordic Ware builds this one from natural uncoated aluminum and says it protects against over-browned bottoms, especially in ovens with hot spots.

It is the right sheet for rolled and iced sugar cookies, shortbread, meringues and anything meant to stay pale, and a good fix for an oven that runs hot at the bottom. The baking surface is 13 by 16 inches.

Insulation cuts both ways. Cookies that should crisp and brown underneath, like chocolate chip or gingersnaps, take longer and spread more on an insulated sheet. Keep a plain aluminum or nonstick sheet for those.

The catch. Slows browning, so crisp cookies take longer and spread more.

A silicone baking mat does what parchment does, again and again. OXO's is food-safe silicone over a fiberglass core, sized at 11.5 by 16.5 inches for a standard half sheet. Cookies release without greasing, and sticky things like florentines, brittle and caramel lift off cleanly.

Mats also insulate slightly, which helps cookies bake evenly and keeps thin bottoms from scorching. OXO lists it as oven and dishwasher safe and covers it with the OXO Better Guarantee for repair or replacement.

Never cut on it; a knife or pizza wheel slices through the silicone to the fiberglass. It fits the USA Pan and All-Clad sheets above and any half sheet pan, but not the smaller Nordic Ware cookie sheet. For crisp, well-browned bottoms, parchment on bare metal still does better.

The catch. Cuts easily and gives slightly paler bottoms than bare metal with parchment.

Rotate and alternate

Most home ovens bake unevenly. Turn the sheet halfway through, and if you bake two sheets at once, swap their racks as well.

Let a sheet cool before the next batch goes on. Dough placed on a hot sheet starts melting before it reaches the oven and spreads.

Parchment or silicone

Parchment gives crisper, browner bottoms and goes in the bin. A silicone mat gives slightly paler, more even bottoms and lasts for years. For a season of baking, a mat or two pays for itself; keep a roll of parchment for anything you want deeply browned.

Care for bare aluminum

Hand wash uncoated aluminum sheets. The dishwasher's detergent dulls and darkens the metal. The browned patina that builds up with use is normal and does no harm.

Why are my cookies burning on the bottom?

Usually a dark pan, an oven that runs hot at the bottom, or a rack set too low. Bake on a light-colored sheet in the middle of the oven, or try an insulated sheet.

Can I put a nonstick cookie sheet in the dishwasher?

Only if the maker says so. All-Clad lists its Pro-Release sheet as dishwasher safe; USA Pan recommends hand washing.
